Karuna's Chocolate Mousse with Berry Compote
A protein-rich and featherlight mousse that's quick and easy to whip up.
I’ve always been a dessert girl. So much so, that for years, I’d get to a restaurant and order cake first. No, you read that right. I’d eat dessert before the meal, and again after, sometimes. I was happiest with a sweet breakfast – give me a buttered croissant with fresh strawberry jam and a coffee, yes please. I also loved the ritual of the tea time sugary snack. As suspected though, a-slice-of-cake-a-day did not keep the doctor away.
At 38 I was prediabetic, and though I brought it under control in a swift panic, it was only post my cancer diagnosis a year later, that I began to really seriously examine the way (and amount) I consumed sugar. Which led to a lot of experimentation and the creation of some very fun “doesn’t even taste healthy” options, most of them pretty easy, but none so easy as my go-to Chocolate Mousse. The thing I adore about this recipe is that it’s ready in about 12 minutes. Less once you practice.
But the real beauty of this recipe is that by the end of it, you’ve consumed almost 70 grams of protein. The base of 200 grams of tofu is just the start, offering about 30 grams of protein, but when you add to it a protein powder like Mille’s Coffee Hazelnut, that’s another 25 grams right there. The secret sauce (quite literally) is the compote, which I now add about half a scoop of Mille’s Unflavoured powder to, since it’s heat stabilized and mixes in like a silky dream, making your new favourite dessert a whopping 70 grams of plant protein. And it tastes incredibly good. I’ve served this to many assertively non-vegan, non-health freak friends, and it’s gone down without so much as a mumble of protest. You’re welcome.
